Sourdough pancakes with milk kefir

Pancakes every morning? Why not!
Sourdough pancakes with milk kefir and almond paste instead of butter are both healthy and (very) tasty.

Ingredients

  • 260g surdough starter (1 cup)

  • 260g milk kefir (1½ cup)

  • 249g all-purpose flour (2 cups)

  • 25g honey

  • 50g almond butter

  • 2 eggs

  • 24g baking powder (2tbs)

  • 16g baking soda (1tbs)

  • 16g of salt (1tbs)


Preparation

Step 1: Mix starter and milk kefir


First, mix starter and water. Stir until the sourdough starter is fully dissolved.


Step 2: Add sugar and flour


Gradually add sugar and flours.

If you are using a mixer, set to medium speed. Keep kneading until the dough becomes smooth.


Step 3: Long proofing (room temperature)


Leave the dough rest in a bowl overnight or for at least 8 hours. Cover the bowl with a tea towel and place it in a warm room (~20°).


Step 4: Add all remaining ingredients


Add the almond butter to the mix. Add eggs, baking powder, baking soda and salt.


Step 5: Cooking


Butter and pre-heat a pan.

Cook the pancakes in small batches and turn when golden.
