Pancakes every morning? Why not!
Sourdough pancakes with milk kefir and almond paste instead of butter are both healthy and (very) tasty.

Ingredients
260g surdough starter (1 cup)
260g milk kefir (1½ cup)
249g all-purpose flour (2 cups)
25g honey
50g almond butter
2 eggs
24g baking powder (2tbs)
16g baking soda (1tbs)
16g of salt (1tbs)
Preparation
Step 1: Mix starter and milk kefir
First, mix starter and water. Stir until the sourdough starter is fully dissolved.
Step 2: Add sugar and flour
Gradually add sugar and flours.
If you are using a mixer, set to medium speed. Keep kneading until the dough becomes smooth.
Step 3: Long proofing (room temperature)
Leave the dough rest in a bowl overnight or for at least 8 hours. Cover the bowl with a tea towel and place it in a warm room (~20°).
Step 4: Add all remaining ingredients
Add the almond butter to the mix. Add eggs, baking powder, baking soda and salt.
Step 5: Cooking
Butter and pre-heat a pan.
Cook the pancakes in small batches and turn when golden.
